If you are from the islands, have visited the islands, or even if you have an appetite for a new dish. I will share with you an Easy Jamaican Curry Chicken Recipe that I know.

Easy Jamaican Curry Chicken Recipe

Ingredients

  • Chicken
  • Rice
  • Carrot
  • Potato
  • Tomato
  • Onion
  • Flour
  • Mixed Veggies (optional)

Seasoning

  • Parsley (sprinkle)
  • Adobe (sprinkle)
  • Ginger (sprinkle)
  • Black pepper (sprinkle) (not too much)
  • Curry (sprinkle)
  • Oregano (sprinkle)

Directions

  1. Thaw the chicken then cut it up nice.
  2. Place the chopped chicken in a large mixing bowl and mix seasoning with spoon. The chicken should look yellow from the curry.
  3. Dice potato, tomato, carrot, and onion and mix with chicken.
  4. Coat a large skillet with oil.
  5. Place seasoned chicken in skillet on the stove on medium with a few cups of water (gravy).
  6. Check and stir regularly leave on stove for 25-30 min until meat is cooked and soft.
  7. Make the stove a little hotter and take the lid off.
  8. Mix flour in a bowl and make it nice and squishy for some dumplings. Roll it long and slice in small square rolls and place in pot after 45 min. When boiling again return stove to medium.
  9. Place rice in a pot make water cover rice and place a knife of butter in pot place stove on medium. Or if you have a rice cooker use that. I recommend the Aroma Housewares Digital Rice Cooker. It will definitely be easier on you. (If you want additional veggies place mixed veggies above the rice on the rice cooker).
  10. After all that place timer on for 7 mins.
  11. Place for another 9 mins. and switch rice and meat spots on stove (only follow this step if you are cooking rice in a pot).
  12. Let the food cool for a few minutes then it will be ready to be served!
